ARUGULA PESTO

2 cups packed arugula leaves
½ cup walnuts
½ cut fresh Parmesan cheese
½ cup extra virgin olive oil
6 garlic cloves

Toast walnuts in a pan over medium heat until lightly brown, or heat in microwave for a minute or two until you get a roasted flavour.  Combine arugula, walnuts, and garlic in food processor.  Pulse while drizzling the olive oil into the processor.  Remove the mixture from the processor and stir in Parmesan cheese.  Serve over pasta.
