1 large baking potato per person
sea salt
extra virgin olive oil
fresh lemon juice
1 chive blossom per potato, separated into florets
small bunch of chives, snipped
small bunch of scallions, chopped
freshly cracked pepper

Preheat oven to 350 degrees and scrub potatoes.  While still wet, roll potatoes in a little sea salt.  This helps draw the moisture from the potato and makes it really nice and fluffy.  Place direclty on onven rack and  bake until tender.   Remove from oven and dust the salt off.  Make a slit in potato and press ends so the insides puff up through the slit.

Drizzle with olive oil and lemon juice.  Sprinkle with salt and pepper.  Top with chives, scallions and chive blossom florets.
