BEET GREENS AND HONEY WALNUTS

2 T. olive oil
2 lbs. beet greens; washed, stems removed, and coarsely chopped
1 T. chopped garlic
1 tsp. salt
1/2 tsp. red pepper flakes
1 T. butter
1 cup whole shelled walnuts
2 T. honey

Heat oil in large pan and add beet greens.  Stir-fry the greens over high heat and add the garlic and seasonings.  Lower the heat and let the greens simmer in their own juices for 5 minutes before pouring greens into a serving dish.  Heat the butter in a small saucepan over medium heat until melted.  Add the walnuts.  Shake the nuts in the hot butter, add the honey and coat well before pouring over the beet greens.
