GERMAN FRIED RED CABBAGE

1 small to medium head of red cabbage, coarsely chopped
1 medium onion, coarsely chopped
olive oil
6 slices of crisply fried bacon
2-3 T cider vinegar
2-3 T brown sugar

Pour small amount of olive oil into large frying pan with a lid.  Heat on medium heat.  Toss in vegetables and fry with the lid off, stirring occasionally for about 20 minutes.  Meanwhile fry bacon and drain it.  When cool, chop it.  When the cabbage mixture is limp, add bacon, vinegar and brown sugar.  Stir until well mixed.  Caraway seed may be substituted for the bacon for a vegetarian dish.
