MINT JALAPENO VINAIGRETTE

2 cloves chopped garlic
1 jalapeno chile, seeded and chopped
3 T olive oil
2 T lemon juice
1/3 cup fresh mint leaves
¼ tsp salt
¼ tsp pepper

Whirl ingredients in a blender until smooth.  Serve immediately or keep, covered and chilled, up to one week.  This dressing will become spicier the longer you keep it.
