1 cup nasturtium leaves, flowers and buds
1 pint champagne, white wine or apple cider vinegar

Place ingredients in clear glass jar or bottle and seal tightly.  Let sit for at least 3 weeks before using. The nasturtium can be left in the bottle but be sure it is covered by the vinegar at all times.  Use in salad dressings, sauces, etc.
