PAK CHOY FRITTATA

1 T olive oil
1 garlic clove, crushed
1 bunch baby pak choy, trimmed and finely chopped
3 green onions, thinly sliced
6 eggs
1 cup cream (or a bit less than 1 cup of whole milk)

Heat oven to 350 degrees.  Grease a 9-inch square  or round casserole dish.Heat oil in frying pan over medium-high heat.  Add garlic, pak choy and onions.  Cook and stir for 1 minute or just until pak choy has wilted.  Remove from heat.

Whisk eggs and cream together in a bowl.  Add pak choy mixture.  Combine.  Pour into pan and bake for 50 minutes or so, until just set and no longer liquid in the center.  Will be lightly brown around the edges.
