ROASTED BEETS x2

12 beets peeled or unpeeled
2-3 T olive oil
1 tsp. sea salt
1 tsp. black pepper
2 T butter, optional
4 scallions, optional

#1 ~ Preheat oven to 425 degrees.  Small beets may be left whole.  Large beets may be cut into halves or quarters.  Place beets on a large baking sheet and toss with oil and seasoning.  Transfer to the oven and roast until tender and browned.  Larger beets may take 1 ½ hours.  Add the butter and garnish with scallions.

#2 ~ (SIMPLE)
Scrub beets under cold water, rub them with vegetable or olive oil and sprinkle with a little sea salt.  Roast on a baking sheet at 350 degrees.  Small to medium beets take 30-60 minutes.  You may cut the larger beets into smaller pieces to shorten the roasting time.  When the beets can be pierced easily with a fork, they’re done.  Once the beets are cool enough to handle, the skins slip off easily.
