SWISS CHARD AND POTATO SOUP

Fry bacon and remove from pan.  Add onion and mini sweet peppers to bacon grease.

Chop Swiss chard and add to frying pan with garlic.   Cook until tender.

Boil diced potatoes and sliced carrots in tomato or vegetable juice.  When tender add fresh parsley and chopped mustard.   Add chopped tomatoes and contents of frying pan  to pot.

Season with salt, pepper, oregano, Cajun seasoning, a bit of cayenne.

Top bowls of soup with crumbled bacon.
