DUCK EGG CREPES

1 ½ cups sifted all-purpose flour
1 duck egg, beaten
2 T sugar
2 ¼ cups milk
1 tsp. baking powder
2 T butter or margarine or more
½ tsp. salt
1 T buckwheat flour, ground flax, etc. optional

Preheat oven to 300 degrees.  Sift flour with sugar, baking powder and salt.  Combine egg and milk.  Add to dry ingredients and mix well, until smooth.  For each pancake, melt ½ teaspoon of butter in a large skillet.  Or unwrap end of stick butter or margarine and “paint” bottom of skillet with it.  Pour in ¼ to 1/3 cup batter, rotating pan quickly to spread batter completely over bottom of pan.  Cook, over medium high heat until small bubbles form on top of pancake.  Flip over and cook until bottom is light golden brown.  Fold into quarters and keep hot in oven while cooking remaining pancakes.
