KALE AND POTATO SOUP WITH SAUSAGE

1 lb. ground pork sausage
1 medium onion
1 tsp. chopped garlic
1 large can chopped or pureed tomatoes with juice, or 1 quart spicy tomato juice
6 large potatoes
6 whole carrots
Italian seasoning or seasoning of choice
red pepper flakes, optional
salt and pepper
1/2 lb. kale; washed and stalks removed

In a large soup pot, cook sausage with onion and garlic.  May need to add olive oil so sausage doesn’t stick in pot.

Add seasonings and tomatoes or tomato juice.  Both may be used, if desired.

Peel potatoes and carrots and cut into small bite-size pieces.  Add to pot.  More water or vegetable broth may be

added, if needed.

Simmer until potatoes and carrots are tender.  Cut kale leaves into small pieces.  Add kale about 2 minutes before

serving.  Adjust seasoning.

Optional soup ingredients:  rice, lentils, beans, limas.  Add chopped zucchini or cooked sausage links toward the end of

the cooking time.
