MINT SAUCE FOR FRESH FRUIT

1 cup sugar
1 cup hot water
½ cup mint leaves
¼ cup light corn syrup
4 drops green food coloring, if desired

Combine sugar and water.  Mix well, add mint and microwave on High for 5 minutes or until boiling.  Boil for one minute.  Strain mixture and discard leaves.  Add syrup and food coloring.  Chill 4 hours.  Serve over ice cream or fruit salad.
