Preheat oven to 400 degrees. Scrub potatoes clean and remove spots—no need to peel them. Cut them into similar-sized chunks, leaving the small ones whole, if possible. The smaller the chunks, the quicker they roast.
Place potatoes in a 9 x 13 baking dish. Sprinkle sea salt evenly over the potatoes then drizzle with melted butter or olive oil.* Toss with your hands to coat evenly.
Bake about 20 minutes. Stir. Bake another 15-20 minutes, until tender and golden brown.
*Garlic powder, rosemary, parsley, black pepper may also be added to potatoes.
