ROASTED RADISHES WITH SOY AND SESAME

Radishes, cut into fourths
Peanut oil
Soy sauce
Green onions, sliced thin
Sesame seeds, toasted in dry pan

Preheat oven to 425 degrees.  Radishes may be quartered or sliced into same size pieces.  Toss radishes with small amount of peanut oil, just enough to coat them.  Roast in pan about 20 minutes, stirring once or twice.  When radishes are tender and starting to brown, remove from oven, toss with soy sauce to coat and mix in green onion.  Place back in oven and roast about 5 minutes more.

During the last five minutes of roasting time, put sesame seeds in dry pan and toast over hot stove for about 2 minutes or starting to brown.  Stir frequently and watch carefully so they don’t burn.  Remove radishes from oven, place in serving bowl and sprinkle with sesame seeds.  Serve hot.
