1 pound cooked pasta
3 slices thick-sliced bacon, diced
1 bunch mizuna, roughly chopped
1 tomato, chopped
1 cup coarsely chopped walnuts
3 cloves garlic, minced
1 onion, diced
3 T. mustard
3 T red wine vinegar
2 T. lemon juice
3 T. olive oil
salt and pepper to taste
Cook bacon and drain. Heat olive oil over medium heat and add onion, garlic, and red wine vinegar. Cook for 5 or 6
minutes, or until onions begin to carmelize.
Add walnuts, mustard, lemon juice, and tomato and cook until tomato begins to dissolve, about 4 minutes. Add mizuna
and cook just until it wilts. Season.
Serve over pasta and sprinkle with shaved Parmesan.
